From 100 years ago in Italy, “made at the time”, “pressed out” refers to the traditional method of making strong black coffee, forcing steam through compacted ground coffee beans for immediate consumption. With firm crema, the light brown foam layer on top, full body, intense aroma, the result of the pressure extraction method. Espresso is the base of almost every type of coffee, other than regular filter coffee. Robusta must be included in any espresso coffee blend for character, preferably Vietnamese Robusta. Medium to dark roast is perfect for classic, balanced espresso.
